INTRODUCTION
Tigermit (cyperus esculentus) is an
underutilized crop of family cyperaceae which produces rhizomes from the base
and tubers that are somewhat spherical. It is commonly known as “each almondâ€, “chufaâ€,
chew-fa†and “Zulu nutsâ€. In Nigeria, it is known as Aya in Hausa, ofio in
Yoruba and Akiausa in Igbo, and three varieties (Yellow, brown, and black) are
cultivated, but only two varieties (yellow and brown) are readily available in
the market (Oladele and Aina 2007). The yellow varieties of tiger nut because
of its physical properties like bigger size, attractive color and fleshier
body. The yellow variety also yields more milk upon extraction, contains lower
fat and more protein and possesses less anti-nutritional factors especially
polyphenols (Okafor et al, 2003).
